In Juvenile Hall, Cooks are responsible for the overall preparation and cooking of food in large quantities and the service of one or more of the daily meals served.They develop new recipes and meal plans, and may preparespecial meals for medically-restricted diets and special menus for other catering needs of the Probation Department.
- Servemeals and refreshments for catered functions
- Deliver food to housing units
- Adjust recipes accordingly based on population
- Operate kitchen equipment such as steam kettles, ovens, broilers, grills, meat slicers, etc., and adjust thermostat controls to regulate temperature of ovens, broilers, grills, androasters
- May provide training to staff
- Are responsible for dishwashing and general cleanliness of the kitchen
The ideal Juvenile Hall candidate will possess:
- Extensive experience cooking with industrial-sized equipment in large facilities
- Experience preparing meals for special dietary needs
- Successful completion of courses in institutional food preparation
Probation Camp is located in Forestville. The facility includes a fully functional, modern kitchen and has the capacity to provide non-secure residential housing for up to 24 youths. The cook at Probation Camp coordinates, and participates in the obtaining, preparation, cooking, and presentation of standard and therapeutic foods for youth; supervises and instructs youth in the culinary program, and menu development.
The ideal Probation Camp candidate will have experience:
- Preparing menus that will appeal to children and youth
- Meeting nutritional guidelines and special dietary needs of individuals
- Performing catering events
- Working with youth
Possession of a Food Safety Professionals Certificate, or the ability to obtain one, is highly desirable.
Cooks in Juvenile Hall do not work directly with the youth in custody. Cooks at Probation Camp are responsible for working/teaching/coaching the youth in the facility.
We are recruiting to fill multiple extra-help (intermittent) Juvenile Hall and Probation Camp Cookpositionsin theProbation Department. This employment list may also be used to fill future extra-help positions as they occur during the active status of the list.The Civil Service title for this position is Cook.
Extra-help employees relieve or augment permanent staff. Intermittent, extra-help employees are not in the classified civil service and do not have property rights to permanently allocated positions. In addition, they do not receive most regular employee benefits such as: long-term disability insurance coverage; accrual of vacation; participation in the County retirement program; or eligibility to take promotional examinations.Intermittent, extra-help employees are limited in their employment to a maximum of 1,380 hours within any twelve month consecutive period.Extra-help employees who meet the eligibility requirements (generally worked 11 consecutive pay periods with a minimum of 440 hours and are scheduled at least 40 hours per pay period) may qualify for a County contribution toward medical coverage.

Education: The ability to speak, read and write English and make simple arithmetical calculations commensurate with the knowledge and abilities listed. Successful completion of special courses in institutional food preparation is highly desirable.
Experience: Any combination of experience which would provide an opportunity to acquire the knowledge and abilities listed. Normally, two years of recent experience in the preparation and cooking of a variety of foods in a large-scale institutional or commercial setting, such as a medium sized hospital or detention facility, would provide such opportunity.
Knowledge, Skills, and Abilities
Working knowledge of: the methods, procedures and equipment involved in the large scale preparation of foods; the health and safety hazards in institutional food preparation; the necessary safety precautions.
Some knowledge of: the basic principles and practices of dietetics and nutrition.
Ability to: follow detailed oral and written instructions; prepare and cook food in large quantities; prepare modified diet items; supervise the work of assigned staff and inmates; establish and maintain effective working relationships with coworkers, inmates or wards, supervisors and staff of other departments; work early morning shifts, evenings, holidays and weekends; work for long periods of time while standing and under conditions of high temperature; lift, push and pull heavy equipment and supplies; make simple arithmetical calculations; operate kitchen equipment.

The selection procedure will consist of the following examination:
An Application and Supplemental Questionnaire Appraisal (pass/not pass) will be conducted to evaluate each applicant's combination of educational coursework, training, experience, knowledge, and abilities which relate to this position to ensure satisfaction of the minimum qualifications for this position.Candidates who possess the minimum qualifications for the position will be placed on an extra-help employment list and referred to the department. The department may contact candidates from the employment list who possess the most appropriate job-related qualifications for further consideration.
It is the policy of law enforcement/legal offices and departments, in the County of Sonoma, that job candidates complete a thorough background investigation process prior to employment.This policy is imperative in order to keep the department's employees and the public safe, and to maintain high standards in the law enforcement community. Candidates referred to departments for a selection interview are typically required to sign authorization and release forms enabling such an investigation. Issues that arise during the investigation process will be assessed, and judgment and discretion will be used to determine the employability of the candidate.
